Paneer Paratha

Paneer Paratha is a Indian flat bread with spiced indian cottage cheese stuffing. I had some home made paneer and prepared this paratha for evening snacks. This paratha is served with curd. Paneer is always my favourite. That too I love the recipes made with home made paneer. Please check below for step by step instructions and pictures for preparing Indian Paneer Paratha.

Paneer

Ingredients:
Table 1: For Outer Cover
Atta \ Whole wheat flour  
1 Cup 
Salt

Table 2: For stuffing 
Shredded paneer     
1 Cup
Chopped coriander leaves 
2 stalks
cumin seeds
1 tsp
Turmeric
1/4 tsp
Coriander powder
1 tsp
chilli powder
1 tsp
Salt




Table 3: 
Oil / Ghee                         
4 tsp     


Instructions:

For Outer Cover:
  • Make a soft dough by adding atta, salt along with water. Allow it to rest for 15 minutes. Take a fraction of dough and make balls of medium size lemon. For me, it yielded 4 balls.
For stuffing:
  • Mix all the ingredients from table 2.  Take a fraction of dough and make ball of  slightly bigger size of ball prepared for outer layer . The number of outer layer balls and stuffing balls should be same.Take a outer layer ball, using hand pat gently and flatten to 2-3 inch diameter. Keep the stuffing in centre and close the outer layer.
  • Using rolling pin, flatten the ball to to 10-12 inch diameter.
  • Heat dosa pan.  place the paratha in dosa pan. Drizzle 1/2 tsp of ghee or oil if needed. Cook till golden spots appear on some places. Turn and drizzle 1/2 tsp of oil. cook until golden spots appear on the other side also. Repeat the process for remaining flatten dough balls.

Tips:
Adjust chilli powder to your taste.
Variation can be done by adding finely chopped green chillies
