Fluffy Poori / Puri Preparation:

Ingredients:
Chappathi Flour / Atta

Instructions:
- Make a stiffer dough by adding chappathi flour, warm water, sooji and salt.
- Knead well and leave the dough for 5 minutes. Again knead it so that no cracks are found in dough.Take a fraction of a dough and make a ball the size of a medium lemon. Flatten the balls to 4-5 inches in diameter using rolling pin.
- Heat Oil in a Kadai. Oil should be enough to immerse poori. If the Oil is not enough hot, you won't get fluffy poori. Deep fry the poori's in hot Oil. Gently and carefully press the poori with ladle from centre to circumference to get fluffy poori.
- Poori will start rising. Check the picture below
- Once the colour is changed to golden colour, cook on the other side.

- Heat oil in the pan and add mustard, cumin seeds, Urad dal and channa dal. Fry till channa dal turns golden colour. Add curry leaves,green chillies, red chillies and ginger. Fry till raw smell goes off.Add chopped onion and fry till onion turn translucent.
- Add tomatoes and fry till they turn mushy.Add smashed potatoes and 1/2 Cup of water .Fry it in a low flame for 3 -5 minutes. If you need more watery masala, add 1-2 cups of water and fry accordingly.
- Adjust chillies to your taste.
- My mom adds ground pottukadalai while making masala.
