Dahi Vada
Dahi Vada is a popular Indian Chaat prepared by soaking cooked vada in yogurt | Curd. Dahi vada is also known as Dahi Bhalla, Doi Bora, Dahi Bara. Deep fried urad dal vada are first soaked in water, then transferred to yogurt. Various topping like carrot, coriander leaves, sev, cumin powder, chilli powder are used to give more flavour and taste. Table 1: For Bonda
Urad Dal / Ulutham paruppu 
1/2 cup   
For Deep Frying
Ginger finely chopped
1 tsp
Curry leaves finely chopped 
Green chillies finely chopped 
Coriander leaves finely chopped 
2 stalks
Black pepper 

Table 2: For Garnishing
Beaten Curd | Yogurt
1.5 cup   
Shredded carrot
1/4 Cup
Coriander leaves finely chopped
1/4 Cup
1/4 Cup
Cumin powder
1/2 tsp
Chilli powder 
1 tsp

  • Wash and soak urad dal for 1.5 hours. Strain the water. Grind urad dal to a smooth paste in a grinder Grind it till urad dal turns soft and fluffy.

  • Add salt, ginger, curry leaves, green chillies, coriander leaves and black pepper to the dough and mix well.

  •  Heat Oil for deep frying. Drop small lemon size of batter in oil and deep fry till it turns golden brown on both sides.Drain the excess oil by placing it in a paper towel.

  • Soak the vada in hot boiling water for a min. Remove from water and place it in paper towel. Squeeze the water from vada. This helps to soften the vada.
  • Arrange the vada in serving plate. Add beaten yogurt and garnish with shredded carrot, coriander leaves, sev, cumin powder and chilli powder.
