Vara milagai chutney is very spicy side dish for Idli and Dosa. This red chilli chutney can be prepared in two ways. Both the methods are explained below.

Ingredients:
Sesame Oil

Instructions:
Method 1:
Method 1:
- Grind onion,tomato,3 red chillies, garlic, salt, coriander leaves and tamarind adding water.
- Heat oil in the pan and add mustard, cumin seeds, curry leaves and one red chilly.
- When they splutter add urad dhal and fry till they turn golden brown colour.
- Now add the seasoning to grind-ed paste.
Method 2:
- Grind onion,tomato,3 red chillies, garlic, salt, coriander leaves and tamarind adding water.
- Heat oil in the pan and add mustard, cumin seeds,curry leaves and one red chilly.
- When they splutter add urad dhal and fry till they turn golden brown colour.
- Now add the grind-ed paste and 1 cup of water.
- Cook in medium flame till chutney thickens.
