Capsicum Rice | Bell Pepper Rice

Capsicum Rice
My hubby is not a big fan of capsicum.  I was longing to try a rice recipe with bell pepper and was searching in google. Finally I got the recipe from my favourite Vahrehvah website. The ingredients mentioned was so appealing and I know my hubby will surely like the recipe. I experimented the recipe yesterday and it was a big success. My hubby really loved it and he say a big GO to this capsicum masala rice.  It is an excellent Lunch box recipe.  Please check below for step wise instructions and pictures for preparing Capsicum Rice.

Yields :                         3 Servings

Capsicum Rice

Ingredients:
Table 1:
Oil
1 tbsp
Mustard
1/4 tsp
onions chopped lengthwise 
1/3 Cup
Capsicum chopped 
1/2 Cup
Salt
Cooked Rice
2 Cups

Table 2: To dry roast and grind
Black pepper                     
1/2 tsp   
Coriander seeds                  
1 tsp
Urad Dal
1  tsp
Chana Dal
1  tsp
Red chillies
2
Cumin seeds
1 tsp
Cloves
2
Cinnamon stick 2.5 cm
1
Roasted peanuts
1/4 Cup


Instructions:
  • Dry roast all the ingredients except roasted peanuts from table 2. Grind it to a coarse powder. If raw peanuts are available instead of roasted peanuts, then dry roast raw peanuts also.

  • Heat Oil in a pan. Add mustard and when they splutter add chopped onions. Fry till onions turn translucent. 


  • Add capsicum and fry till capsicum is cooked. Add grind-ed powder and fry for a min. 


  • Switch of the stove and add rice and salt.Mix well

Tips:
Adjust red chillies to your taste.
