Ingredients:
Cooked Rice | 2 Cups |
Butter | 1 tbsp |
Mustard | Kadugu | 1/4 tsp |
Cumin seeds | Seeragam | 1 tsp |
Fennel seeds | Sombu | 1 tsp |
Cloves | Krambu | 2 |
Cinnamon stick | Pattai | 1 inch |
Cardamom | Yelakkai | 1 |
Finely chopped ginger | 1 tsp |
Green chillies | 3 |
Curry leaves | 3-5 |
Onions chopped | 1/2 Cup |
Carrot grated | 1 Cup |
Turmeric powdder | 1/4 tsp |
Coriander Leaves chopped | 2 stalks |
Instructions:
- Heat butter in a pan. Add mustard and when it splutter,add cumin seeds, fennel seeds, cloves, cinnamon and cardamom.
- Add finely chopped ginger, curry leaves and green chillies and fry till raw smell goes off. Add onions and fry till they turn translucent.
- Add grated carrot and fry for 2-3 mins till carrots are cooked. Add turmeric powder, salt and coriander leaves. Fry for a min. Switch off the stove. Mix this to cooked rice. Adjd salt if needed.

Tips:
Butter can be replaced with any cooking oil.
Adjust green chillies to your taste.
To get rich flavour, garnish with roasted peanuts or roasted cashews.
If you are adding ginger paste instead of finely chopped ginger, then add ginger paste after adding onions.
