Ingredients:
Ghee | 1 tbsp |
Cashews | 6-10 |
Raisins | 6-10 |
Semiya | Vermicell | 1/4 Cup |
Milk | 2 Cups |
Mango pulp | 1 Cup |
Sugar | 1.5 Cup |
Cardamom powder | Pinch |
Instructions:
- Heat Ghee in a pan. Add cashews and fry. when cashews starts to turn golden colour, add raisins. Fry for 20 -30 secs till raisins become fluffy. Remove cashews and raisins from pan. In the same pan, add semiya and 1/4 cup water.
- Once semiya is cooked, add milk and allow it to boil. When the milk reduces to half, add sugar and cardamom powder.
- Add mango pulp and cook for 2-3 mins. When the payasam boils, remove from stove.
- Garnish with cashews and raisins.

Tips:
Roasted almonds, pista can also be added for garnishing.
Adjust sugar to the sweetness in mango pulp.
Payasam thickens after some time, add 1/4 cup hot milk before servings.
Cook Payasam in medium or low flame.
If you are planning to serve payasam chill, then add little more sugar.
