Bhindi Masala | Chapati Side dish


Bhindi MasalaBhindi is also known as Lady's Finger, Okra and Vendakkai. Lady's finger is rich in dietary fibres, minerals and vitamins. It is a low calorie vegetable and one of the suggested vegetable for weight reduction. Bhindi Masala is a easy gravy that can be served as a side dish to Chappati / Roti. Bhindi Masala can be prepared within 30 mins with easily available ingredients in home. This is one of a low calorie side dish for chappati. Yields: 2 servings

Ingredients:

Lady's Finger | Okra | Vendakkai15
Oil1 tbsp + 2 tsp
Ginger and garlic finely chopped1 tbsp
Green chillies slit open2
Onions chopped1/2 Cup
Tomatoes chopped1/2 Cup
Chilli powder2 tsp
SaltAs needed
Garam masala powder1 tsp
Coriander leaves chopped2 stalks

Instructions:
  • Wash and remove the crown and end part of okra. Dry it in paper towel for 5 mins to remove moisture. cut into 1 inch pieces. Heat 1 tbsp of oil in a pan. Add cut okra and fry in medium flame for 5-6 mins till okra is half cooked. Remove from stove.

  • Heat 2 tsp of oil in a pan. Add finely chopped ginger, garlic and slit open green chillies. Fry till raw smell goes off. Add onions and fry till they turn translucent.

  • Add tomatoes and fry till they turn mushy. Add chilli powder followed by okra.

  • Add garam masala powder, 1/2 cup of water and cook till okra is fully cooked. Garnish with coriander leaves.

Adjust chilli powder to your taste.
