Mustard | 1/4 tsp |
Channa dal | Kadalai paruppu | 1 tsp |
Urad dal | Ulutham paruppu | 1 tsp |
Red chillies | 2 |
Ginger finely chopped | 1 tsp |
Curry leaves | 4 |
Green Chillies | 2 |
Onions chopped | 1/2 cup |
Cooked vegetables of your choice | 1 cup |
Turmeric Powder | 1/2 tsp |
Salt | As needed |
Lemon Juice | 1 tsp |
Coriander Leaves | 2 stalks |
Roasted Cashews | 2 tsp |
Instructions:
- Refrigerate Idlis for 2 hours before cooking. Smash the left over idly into small pieces.
- Heat oil in a pan and add mustard. When mustard splutter add urad dal, channa dal and red chillies. When channa dal turns golden colour, add chopped ginger and Green chillies. Add onions and fry till onions turn translucent.
- Add cooked vegetables of your choice, salt and turmeric powder. Fry for 2 to 3 mins.
- Switch off the stove and add idli pieces, lemon juice, roasted cashews and coriander leaves.
Mixed Vegetable Idli Upma
Tips:
- This upma can be garnished with roasted Cashews and Peanuts.
- Adjust green chillies to your taste.
- I have added carrots, beans and green peas.
