Mixed Vegetable Idli Upma with Left over Idli

Vegetable Idli Upma
Idli upma is a South Indian recipe prepared with leftover Idlis. This is  a very easy and quick breakfast / tiffin. It can served as a evening snacks.In order to make more healthy, I have added mixed vegetables of my choice. No side dish is required for this colorful mixed vegetable Idli upma. Roasted peanuts and cashews can be added for garnishing to increase richness to this upma. Yields: 3 Servings
Mixed Vegetable Idli Upma with Left over Idli

Ingredients:
Idli Medium Size5
Oil2 tsp
Mustard1/4 tsp
Channa dal | Kadalai paruppu1 tsp
Urad dal | Ulutham paruppu1 tsp
Red chillies2
Ginger finely chopped1 tsp
Curry leaves4
Green Chillies2
Onions chopped1/2 cup
Cooked vegetables of your choice1 cup
Turmeric Powder1/2 tsp
SaltAs needed
Lemon Juice1 tsp
Coriander Leaves2 stalks
Roasted Cashews2 tsp



Instructions:
  • Refrigerate Idlis for 2 hours before cooking. Smash the left over idly into small pieces.

  •  Heat oil in a pan and add mustard. When  mustard splutter add urad dal, channa dal and red chillies. When channa dal turns golden colour, add chopped ginger and Green chillies. Add onions and fry till onions turn translucent.

  •  Add cooked vegetables of your choice, salt and turmeric powder. Fry for 2 to 3 mins.

  • Switch off the stove and add idli pieces, lemon juice, roasted cashews and coriander leaves.

Tips:
  • This upma can be garnished with roasted Cashews and Peanuts.
  • Adjust green chillies to your taste.
  • I have added carrots, beans and green peas.
