Yields: 2 Servings
Ingredients:
Sweet Potato Medium size | 1 |
Oil | 2 tsp |
Mustard | 1/4 tsp |
Urad dal | 1 tsp |
Curry Leaves | 3-5 |
Green chilly | 1 |
Ginger finely chopped | 1 tsp |
Onions chopped | 1/2 Cup |
Salt | As needed |
Coriander Leaves | For Garnishing |
Instructions:
- Wash and cut sweet potato into 3-4 inch circles as shown below.
- Pressure cook for 2-3 whistles and allow it to cool down. Remove the outer skin of sweet potato. Cut into small cubes and keep it ready.
- Heat Oil in a pan. Add mustard and allow it to splutter. Add urad dal and fry till they turn golden colour. Add curry leaves, green chilly, ginger and onions. Fry till onions turn translucent. Add sweet potato and salt. Fry for 2 mins. Switch off the stove and garnish with coriander leaves.
