Ingredients
Table 1: To dry roast and grind
Coriander seeds | Dhaniya | 2 tsp |
Cumin seeds | Seeragam | 1 tsp |
Fennel seeds | Sombu | 1 tsp |
Red chillies | 3 |
Black pepper | Milagu | 1 tsp |
Cloves | Krambu | 1 |
Cinnamon stick | Pattai | 1 inch |
Kasoori Methi crushed | 1/2 tsp |
Table 2:
Oil | 1 tbsp |
Ginger and garlic finely chopped | 1 tbsp |
Onions chopped | 1/2 Cup |
Tomato paste | 1/4 Cup |
Cooked Vegetables | 1.5 Cup |
Salt | As needed |
Coriander leaves | For Garnishing |
Instructions:
- Dry roast all the ingredients mentioned in table 1 and grind it coarse powder.
- Heat oil in a pan. Add finely chopped ginger and garlic. Fry till raw smell goes off. Add onions and fry till they turn translucent.
- Add tomato paste and fry till raw smell goes off. Add the ground powder from ingredients in table 1.
- Add cooked vegetables and 1/4 cup water. Allow the gravy to boil. Switch off the stove and garnish with coriander leaves.

Tips:
Adjust red chillies to your taste.
Add vegetables of your choice. I have added carrots, beans, potato and cauliflower.
