Soya chunks are prepared from soy beans. It is a great meat substitute for vegetarians. Soya chunks are rich in amino proteins, iron and calcium. Soya chunks Biryani is an easy quick healthy and spicy rice recipe from South India. Fresh spice masala is ground and added to the biryani. No Biryani powder is needed for this biryani. Soya chunks biryani makes an excellent Lunch box recipe. Serve it with mint coriander raita. Ingredients:
Table 1: To Grind
Tomato chopped1/2 Cup
Fennel seeds | Sombu1 tsp
Ginger chopped1 tsp
Garlic chopped1 tsp
Green chilly chopped1
Anistar1
Cloves | Krambu2
Cardamom | Yellakai1
Cinnamon stick | Pattai1 inch

Table 2:
Oil1 tbsp
Onions chopped1/2 Cup
Soya chunks20
Basmati rice1 Cup
Thin Coconut milk1 Cup
Turmeric powder1/4 tsp
Coriander powder1 tsp
Chilli powder1.5 tsp
Coriander Leaves For Garnishing

Instructions:
  • Wash and soak basmati rice for 30 mins or as per instruction given in rice bag. Soak soya chunks in hot boiling water for 10 mins and close with a lid. After 10 mins, wash in cold water for 2-3 times. Strain and squeeze the extra water from soya chunks. Cut soya chunks into 2 pieces.

  • Grind tomato, fennel seeds, ginger, garlic, green chilly and garam masala items into smooth paste by adding enough water in blender.

  • Heat Oil in a pressure cooker. Add onions and fry till they turn translucent. Add ground mixture and fry till raw smell goes off.

  • Add soya chunks and fry for a min. Add basmati rice and mix well.

  • Add thin coconut milk, 1 cup of water, turmeric powder, coriander powder and chilli powder. Add coriander leaves. Pressure cook for 3 whistles.

Tips:
Adjust green chillies and chilli powder to your taste.
