Pumpkin is a low calorie vegetable and rich in vitamins and minerals. Yellow pumpkin is known as Parangikai in Tamil, Gummadikaya in Telugu, Kaddu in Hindi. Somehow I have missed posting recipes using yellow pumpkin. So planning to post lot of yellow pumpkin recipes in future.Parangikai poriyal can be served as a side dish to Rice. Pumpkin pieces

Onions chopped

1/2 Cup

Mustard | Kadugu
|
1/4 tsp

Urad dal | Ulutham paruppu
|
1/2 tsp

Chana dal | Kadala paruppu

1/2 tsp

Curry leaves

Green Chilly

shredded coconut

1 tbsp (optional)

Coriander Leaves chopped

1 stick

Instructions:
Tips:
- Heat oil in the pan and add mustard. Allow it to splutter and add Urad dal ,chana dal, curry leaves, green chilly and red chilly. Dry roast till chana dal turns golden colour. Add onions and fry till they turn translucent.
- Add pumpkin pieces and salt. Sprinkle some water and fry it in medium flame for few minutes stirring occasionally. Once the pumpkin pieces are cooked, remove from stove. Garnish with coriander leaves and shredded coconut.

- Adding coconut is optional
- The essential nutrients will lose, if we wash the chopped vegetables, so wash the vegetable thoroughly then chop into small pieces.
- For more spicy, add 1 red chilli and 1 more green chilli
