Cooked Toor Dal | Thuvaram paruppu

Mint Leaves
(tightly packed) |
1/2 Cup

Ripe Medium size Tomato
|

Tamarind
|
Half Lemon Size
|
Turmeric Powder

1/4 tsp

Cumin powder
|
1/4 tsp

Black Pepper
|
2 tsp

Coriander Powder

1 tsp

Instructions:
- Wash and chop mint leaves. Wash and soak toor dal for 20 minutes. Pressure cook toor dal for 4 to 5 whistles.
- Wash and cut tomato into small pieces. Grind tomato into smooth paste by adding enough water. Soak tamarind in hot water. Filter Tamarind juice. Discard seeds and fibers. Add mint leaves and ground tomato pulp to the tamarind juice.
- Heat Oil in a pan. Add mustard and allow it to splutter. Add cumin seeds, curry leaves. Add shallots, garlic cloves and fry till shallots turn translucent. Add Asafoetida powder.
- Add cooked toor dal, tamarind, tomato and mint leaves.
- Add salt, turmeric powder, cumin powder, black pepper and Coriander powder. Allow rasam to boil and simmer for 5 mins.

Awesome, just had a chat with my colleague sits behind me in the office. We both are so impressed with this mint version. Of course rasam is our fav and I shall try out after getting the mint leaves.
