Recipe Category: Main Recipe Cuisine: South Indian Author: Nithya Ingredients: Rice: 1 Cup Red Gram | Toor dal : 1/2 Cup Oil / Ghee : 2 tsp Cumin seeds : 1/2 tsp Sombu | Fennel seeds : 1/2 tsp Curry leaves : 4 to 6 Red Chillies : 3 Shallots : 1/2 Cup Garlic : 4 cloves Tomatoes chopped : 1/4 cup Coriander powder : 1/2 tsp Chilli powder : 1/2 tsp Sambar powder(optional) : 1 tsp Salt : As needed Coriander Leaves : For Garnishing Instructions:
1.Wash rice and toor dal and soak it for 30 mins. Heat oil or ghee in the cooker and add mustard and allow it to splutter. Add cumin seeds and Fennel seeds.
2.After a min, add chopped shallots, chopped garlic, red chillies and curry leaves. Fry till onions turn light brown or translucent. Add chopped tomatoes and fry for 2 mins. Dont make it too mushy. 3.Add rice,dal,salt,turmeric Powder,chilli Powder,coriander Powder,sambar Powder and coriander leaves. Add 3 cups of water and mix well. Pressure cook and allow 3 whistles. Tips: Adding 1 tsp of Ghee or Coconut oil in the last adds more flavour to the recipe. If shallots are not available,replace it with onions. Adjust red chillies to your taste. Green chillies are not used in authentic arisi paruppu sadam. |
