Carrot Chutney | Step wise pictures
Carrots are rich in Vitamin A, minerals and fibers . Lack of Vitamin A causes poor vision and night vision. Julinned Carrots can be served as a finger food to toddlers and preschoolers. Carrot chutney is a easy, quick and healthy chutney that can be served as a side dish to Idli, Dosa and Chapati. It an also be used as a Sandwich spread. Yields : 2 Servings 
Carrot Chutney

Ingredients:
Table 1:
Oil
1 tbsp
Mustard
1/4 tsp
Cumin seeds
1/2 tsp
Urad dal
1 tsp
Red Chillies
3
Onions chopped
1/2 Cup
Tomato chopped
1/2 Cup
Carrots chopped
1 Cup
Salt
Turmeric powder
1/4 tsp
Coriander powder
1 tsp


Table 2: For Tempering
Oil                                      
1 tbsp
Mustard
1/4 tsp
Red chilly
1
Curry Leaves
3-4
Urad dal
1/2 tsp

Instructions:
  • Heat oil in the pan and add mustard, cumin seeds and urad dal. When urad dal changes golden colour, add red chillies and onions. Fry till onions turn translucent.

  •  Add chopped tomatoes and fry it till the tomatoes turn mushy. Add the chopped carrot, salt, turmeric powder and coriander powder. Fry it in medium flame for 5 mins. If needed sprinkle water.

  •  Allow the mixture to cool down. Grind the mixture in blender / Mixie by adding enough water into a smooth paste. 
  • Tempering: Heat oil in the pan and add mustard, red chilly, Curry leaves and urad dal. When Urad dal turns golden colour, add it to the grind mixture.
Tips:
  • Variations can be done by adding garlic and ginger.
  • Adjust the red chillies according to your taste and also based on the carrot sweetness.
