Cauliflower Fry
Poriyal is a dry vegetable curry from South India. It is served as a side dish to Rice and indispensable in South Indian Lunch. Cauliflower is my dad's favourite. My mom frequently prepares cauliflower based recipes. Cauliflower Fry is a simple, quick dry curry. It can also be served as a side dish to Roti | Chappati. South Indian style dry Cauliflower fry. Rice, roti and chapati Side dish

Ingredients:
Oil : 1 tbsp
Mustard : 1/4 tsp
Curry leaves : 5
Ginger and garlic finely chopped  : 1 tbsp
Onions chopped : 1/2 Cup
Cauliflower small florets : 20
Coriander powder : 1/2 tsp
Salt : As needed 
Turmeric powder : 1/4 tsp
Chilli powder : 2 tsp
Coriander leaves chopped : For Garnishing

Instructions:
1. Cut cauliflower into small florets. Soak in boiling water for 5 mins to remove germs. Strain the water and keep the cauliflower florets ready.

2. Heat Oil in the pan and add mustard. When mustard splutters, add curry leaves, ginger, and garlic. Fry till raw smell goes off.

 3. Add onions.Fry till onions turn translucent.  Add cauliflower and fry till cauliflower is cooked. Cauliflower will leave enough water to get cooked.

 4. Add turmeric powder, coriander powder, chillii powder and salt. Fry till raw smell goes off. Switch off the stove. Garnish with coriander leaves.

Tips:
Ginger and garlic can be replaced by ginger garlic paste
To add more masala flavour, add 1 tsp of garam masala powder along with other dry powders.
