Paneer Fried Rice
 I am always a big fan of Paneer - Indian Cottage cheese. My mom's fried rice is always a big hit. I used to carry this for my lunch box frequently during my college days. Yesterday my mom gave me the recipe of Paneer Fried Rice and I immediately tried it . My family loved it a lot. It can be prepared for potluck and get together. Kids will surely like this colourful fried rice. Please check below for detailed instructions with step-wise pictures for  preparing Easy Paneer Fried Rice.

Ingredients:
Table 1:
Basmati Rice               
1.5 Cups
Veggies of your choice chopped finely 
(Carrots, capsicum, cabbage ) 
2 Cups
Oil
1 tbsp
Ginger and garlic finely chopped
1 tbsp
Green Chilly slit open
2
Soy sauce
2 tsp
Green chilly Sauce
1 tsp
White Pepper
1 tbsp
Green onions chopped
For Garnishing
Salt


Table 2:
Oil        
1 tbsp
Paneer pieces                              
1/2 Cup            


Instructions:
  • Soak Basmati rice for 1 hour and pressure cook for 3 whistles or follow the instructions given in Basmati rice bag. Add 1 tsp of Oil to Rice and keep it ready.This will reduce the stickiness. Heat Oil in a pan and shallow fry paneer.

  • Heat Oil in a pan.Add green chilli, ginger and garlic. Fry till raw smell goes off. Add onions and fry till they turn translucent.

  •  Add Carrot and  fry it for 2-3 mins. Add cabbage and fry till  veggies are cooked. Add capsicum and fry for 2 mins. Capsicum should retain its crunchiness.

  •  Add  Soy sauce, green chilly sauce, paneer ,salt and white pepper. Mix well. Fry for 2-3 mins in medium flame.

  • Switch of the stove. Add Basmati Rice and garnish with green onions. 
Easy Paneer Fried Rice

Tips:
  • Adding green chilly is optional
  • If white pepper is not available then use black pepper powder. but colour of the dish will get change.
  • If green onions are not available, then replace it with  coriander leaves.
