Nithya: Tell us about yourself ? 
Priya R: Hi, I am Priya Ranjit, I own a food blog Cook like Priya. I am a South Indian and currently live with my husband in UK. 

Nithya: Tell us about your love for cooking ?
Priya R: I had interests to cook before marriage but I never had serious thoughts about it. I used to learn recipes from Amma and forget it in few weeks. But after marriage things changed and since my husband is a foodie, he encouraged me to cook different cuisines and I slowly started trying my hand in cooking basic day-to-day recipes. Slowly I moved to baking, my first baking success was cookies, next I used to read tons of cookbooks and gained lots of knowledge and confidence. Right now my interests are with baking bread.

Nithya: Who was your inspiration to start this blog ?
Priya R: Like most women during my first 6 months of marriage I used to click all my recipes and post pictures in facebook, many started asking me for recipes. Hence I wanted to keep an account of all the recipes I tried. Not only that I wanted to be precise about what ingredients I used, so it was for my own record. My husband encouraged me to blog, little did I know that I could get addicted to it so much.

Nithya: What is your favorite recipe ?
Priya R: I love food :-) love bakes like cakes and cookies. Other favorites include Hydrabadi biryani, Chettinad sides and curry, Chinese noodles and so on.

CHOCOLATE CHIP MUFFINS {EGGLESS, BUTTERLESS}

Hi Readers, Nithya requested me to come up with a recipe that was egg-free and vegetarian. This really made my brains keep working and I gave it a try and it turned out superb. Although I do have eggless butterless muffins and cakes in my blog, I wanted to try them even without yogurt or condensed milk. I love Muffins and when ever I step out, I never miss to have muffins from Starbucks, lately I saw that they also note the number of calories for a large muffin as 350 I was totally shocked. Ever since then I started to make muffins at home. I try my best to replace either eggs, butter or given a chance both. Today's recipe is no exception its an egg-free, butter-free recipe of Chocolate Chip Muffins. Breakfasts here at home are not a daily occurance, simply because you don't feel hungry due to the climate situation. But if there are muffins at home, I sure keep some for the morning breakfast. Since these cute little dainty muffins are egg-free butter-free with a hint of chocolate that melts in your mouth, tell me who would say no to them, not Me :-)

These Choco chip muffins are light and airy, makes you crave for more than one. I find this recipe less in calories, the proportion of sugar is less since I used milk choco chips which have the sugar needed. Once they are out of the oven they remain firm on top, but let it sit in room temperature for 2 hrs and they tend to soften.

Makes ~ 8 medium muffins
Prep & bake time ~ 30 mins

Plain flour - 1 and 1/2 cup minus 3 tbsp
Cornflour - 3 tbsp
Sugar - 1/4 cup
Choco chips - 1/4 cup
Baking powder - 1 tsp
Baking soda - 1/2 tsp
Salt - 1/3 tsp
Milk - 1 cup
Oil - 1/2 cup
Vanilla extract - 1 tbsp

Method
 
  • Pre-heat oven to 180 C. Prepare a muffin tray with liners or use silicon muffin liners.
  • In a large bowl sieve flour, cornflour, sugar, salt, baking powder, baking soda around 3 times to combine well. 
  • In a small bowl add all the wet ingredients - milk, oil, vanilla and mix well. 
  • Make a well in the dry ingredients and slowly combine the wet to the dry. Combine well do not over mix it, such that there is no lumps. Add the choco chip reserving few to be topped later. 
  • Pour batter on prepared liners until 3/4'th full. Place in center of oven and bake for 18-20 mins until skewer inserted in center comes clean.
  • Once done take out of oven and let it cool on the muffin tray for 10 mins then flip them on to a cooling rack to come to room temperature.
Serve along with hot coffee.

Cooks Wisdom
Never over mix muffins and once mixed make sure you pop into oven to bake
- You can add lemon/ orange zest if you like the flavor of it.
- if you have cake flour skip the cornflour 
- for a purely vegan option use soy milk instead of regular milk
- If you are using self rising flour then skip using baking powder
- This is a basic eggless muffin recipe you can use blueberry, raspberry  nuts, raisins in the same batter 
- I used silver spoon milk chocolate chips, hence reduced the amount of sugar, if you want them more sweet add 1/4 cup more sugar
