Coconut Milk Biryani

Coconut is one of the main ingredients used in South India.  Coconut Milk Briyani is a simple recipe which can be prepared within 30 mins. This recipe comes in  hand when there is no vegetable in home.  Indian spices cooked in coconut milk gives a unique taste to the dish. Yields :                                  2 servings

Basmati Rice
1 Cup
2 tbsp
Bay leaf
Cinnamon stick
Coconut Milk
1/2 Cup
Fennel seeds
1.5 tsp
Ginger finely chopped      
1 tbsp
Garlic finely chopped
1 tbsp
Onions chopped lengthwise 
1/2 Cup
Tomatoes chopped
1/4 Cup
Green chillies
Mint Leaves

Turmeric Powder 
1/4  tsp
Coriander Powder 
1/2  tsp
Coriander chopped
4 to 5 sticks

  • Soak Basmati rice for 1 hour or as per instructions given in rice bag
  • Heat Oil in the cooker. Add Bay leaf, cinnamon, cloves and fennel seeds. After 2 mins, add ginger, garlic and green chillies. Fry till raw smell goes off.Add onions and fry till onions turn golden colour

  • Add tomato and fry till they turn mushy. Add turmeric, coriander powder, coriander leaves and mint.

  •  Add coconut milk, bamsati rice,salt and 1.5 Cup water. For exact water measurement check the rice bag and minus 1/2 Cup from it. For example if for 1 Cup rice, 2 cups water is mentioned in rice bag, then add 1.5 Cups of water.

  •  Pressure cook for 3 whistles

Fresh ginger and garlic can be replaced by ginger garlic paste.
Garam masala items can be replaced by adding 3 tsp of briyani powder.
Adding vegetables (carrot, beans, green peas and cauliflower) is optional.
