Egg Rice | Muttai Sadam






 Eggs are rich in proteins. I usually love eggs in egg burji or omelette  Here is a rice recipe prepared with hard boiled eggs coated with Indian masala. A simple main course dish. Please check below for easy and quick Indian Egg Rice.






Preparation Time:              5 mins
Cook Time:                          20 mins 
Ready In:                             25 mins
Yields :                                  Main course for 2 People

Ingredients:
Basmati Rice
1 Cup
Oil
2 tbsp
Hard Boiled Eggs quartered
4
Cumin seeds
1.5 tsp
Fennel seeds
1.5 tsp
Ginger and Garlic finely chopped
2 tbsp
Onions chopped lengthwise
1/2 Cup
Green chillies
2
Salt

Garam masala Powder 
3  tsp



Instructions:
  • Soak Basmati rice for 1 hour or as per instructions given in rice bag. Pressure cook for 2 whistles.
  • Heat Oil in a pan. Add cumin seeds and fennel seeds.After 2 mins add green chillies, ginger and garlic. Fry till raw smell goes off. 


  • Add onions and coriander leaves. Fry till onions turn golden colour. Add garam masala powder and fry for a min. Switch of the stove.


  • Mix the fried masala, salt to cooked basmati rice. Add eggs and mix it gently. 

Tips:
Fresh ginger and garlic can be replaced by ginger garlic paste.
For more masala flavour, add 1 cardamom, 2 cloves and 1 inch cinnamon stick while adding fennel seeds.
Adust green chillies to your taste.
