Schezwan Fried Rice






Schezwan Fried Rice is a Indo-chinese recipe. Schezwan sauce is first prepared. Then vegetables are fried in schezwan sauce and mixed with rice. Please check below for detailed step wise instructions and pictures.

Yields :                         4 Servings


Ingredients:
Table 1:
Cooked Basmati Rice
1.5 Cups
Finely chopped veggies
(Carrot, Capsicum, Cabbage)  
1 Cup
Oil
2 tbsp
Garlic finely chopped
1 tbsp
onion finely chopped
1/2 cup
Orange food colour
pinch
Red chilli sauce
1/2 tbsp
Salt
Green onions               
For Garnishing

Schezwan sauce
Red chillies

1.5 tbsp           
Ginger chopped              
2 tbsp
Garlic chopped
2 tbsp
White pepper
1.5 tsp
soya sauce
2 tsp
sugar
pinch
Oil
1tbsp




Instructions:
Schezwan sauce preparation:
  • Soak red chillies in vinegar for 30 mins. Grind red chillies, vinegar, ginger and garlic. 


  • Heat oil in the pan and add the ground mixture. After 2 mins add white pepper, soya sauce, sugar and little water. Cook in low flame till the oil separates. Transfer it to a bowl.


  • Soak Basmati rice for 30  mins or as per instructions given in rice bag. Cook basmati rice. Once it is cooked, add 1 tsp of Oil and mix with basmati rice.

  •  Heat oil in the pan and add finely chopped garlic. Once raw smell goes off, add finely chopped onion and fry it till the onions turn golden brown. 

  • Now add the vegetables and fry till vegetables are cooked.Add food colour,red chilli sauce and schewzan sauce.Saute it in low flame for 2 mins.

  •  Mix the vegetables with  basmati rice. Add salt  and mix well. Garnish it with green onions.
  
Tips:
Adjust the red chillies number according to your taste
