Roasted Vermicelli | 1 Cup |
Ginger | 1 inch |
Oil | 2 tbsp |
Mustard | 1/4 tsp |
Red chillies | 2 |
Urad Dal | 1/2 tsp |
Channa Dal | 1/2 tsp |
Curry leaves | 4 to 6 |
Green Chillies | 2 |
Onions cut lengthwise | 1/2 cup |
Salt | |
Coriander Leaves | 2 stalks |
Instructions:
- Heat 2 cups of water in a sauce pan. Heat oil in another thick bottomed pan and add mustard, red chillies, urad dal, channa dal. Fry till channa dal turns golden colour.Add onions,Green chillies, Ginger and curry leaves. Fry till onions turn translucent.
- Now add 2 cups of hot water from sauce pan, coriander leaves and salt.
- When water boils add roasted vermicelli and cook for few minutes till water is absorbed.

Tips:
If Roasted Vermicelli is not available, then roast ordinary vermicelli to golden colour in one tbsp of Oil before cooking.
Adjust green chillies to your taste.
Sometimes I use only red chilli based on the availability.
I usually buy bambino vermicelli.
