Homemade Bourbon Biscuits
Me and my brother are biggest fans of bourbon biscuit. We love to eat this biscuit at any time of the day. During my childhood days, when me and my brother goes to nearby bakery, the bakery owner immediately gives us a bourbon biscuit packet, then only asks what else we need. He knows this biscuit will be always in our shopping list.   Even my little one is no different. Every week, when we go to Indian grocery, the first item he picks is bourbon biscuit. Adapted the recipe from here. Please check below for step by step instructions and pictures for preparing bourbon biscuits.

Cook Time: 17 mins
Ready in : 40 mins
Yields: 10 biscuits ( Sandwiched)

Homemade Bourbon Biscuits

Ingredients:

Table 1: For Preparing biscuits
All purpose flour / Maida 
3/4 Cup
Rice Flour
2 tbsp
Cocoa powder
3 tsp
Granulated sugar         
1/3 cup
Baking powder
11/2 tsp
Unsalted butter
4 tbsp
Honey
1 tsp
Vanilla Essence
1/2 tsp
Milk
3-4 tsp

Table 2: For Preparing Cream Filling
Cocoa powder 
1/2 tbsp
Granulated sugar         
4 tbsp
Unsalted butter
2 tbsp

Instructions:
  • Preheat oven to 350 F.  Prepare the baking sheet with liners.
  • Take butter in a bowl. Bring Butter to room temperature. Add  vanilla essence to it.


  • Add sugar to the butter and whisk till it reaches fluffy consistency. Add honey.Add all the dry powders - flour, baking powder, cocoa powder to it. Prepare a dough. If needed add little milk.

  • Roll the dough on parchment paper using rolling pin.Cut into rectangles 3 inch long and 1 inch wide.


  • Using fork, prick the biscuit at 10 places. If needed, sprinkle granulated sugar on top of biscuit.

  • Place the biscuits on the baking sheet and bake it for 15 -17 mins. Mine took 17 mins for the edges to harden. The centre of the cookie will be very soft and the edges will be hard. Remove from oven and allow it to cool for 2 mins. Then transfer the biscuits to the cooling tray and allow it to cool.


For Preparing Cream Filling:
  • Mix the filling ingredients until they are fluffy. Refrigerate for 15-20 mins. Spread 1/2 tsp of cream filling on one biscuit and close it with other biscuit.


Tips:
My cream filling was light brown in colour. If you need dark brown filling, then add more cocoa powder.
Spread the cream filling only after the biscuits are cooled.
