Ingredients:
Bitter gourd | 1 |
Onions Chopped | 1/2 Cup |
Tomato Chopped | 1/2 Cup |
Gingelly oil | 2 tbsp |
Mustard | 1/4 tsp |
Curry leaves | 4 |
Salt | |
Turmeric powder | 1/4 tsp |
Chilli powder | 1 tsp |
Coriander powder | 1/2 tsp |
Jaggery | 1 tbsp |
Instructions:
- Wash the vegetable. Remove the seeds. Cut it into small pieces and cook it in a cup of water.
- Heat oil in the pan and add mustard. When they splutter add chopped onions and curry leaves. Fry till onions turn translucent.
- Now add chopped tomato. Fry till tomatoes turn mushy.Add cooked vegetable, salt, turmeric powder,chilli powder, coriander powder and jaggery. Fry it in medium flame for 5 mins.
Tips:
Adding Jaggery is optional. Jaggery is added to reduce the bitterness.
Lastly garnish with coriander leaves.
This curry can be mixed and eat with rice.
Variation can be done by adding 1/2 cup of tamarind juice.
