Bitter melon is one of the vegetable used regularly in South Indian Cuisine. It is called as pavakkai or paakharkai in tamil, Kaakarakaya in telugu and Karela in Hindi. It has lot of medicinal uses. Bitter gourd curry is a dry curry and can be taken as a side dish to Rice. Jaggery or sugar is added to reduce the bitterness. Gingelly oil is recommended to use for this curry. Please check below for step wise instructions and pictures for making Bitter melon curry.

Cook Time: 20 mins 
Ready In: 30 mins
Yields : 2 Servings


Ingredients:
Bitter gourd 1
Onions Chopped1/2 Cup
Tomato Chopped1/2 Cup
Gingelly oil 2 tbsp
Mustard1/4 tsp
Curry leaves4
Salt
Turmeric powder 1/4 tsp
Chilli powder1 tsp
Coriander powder 1/2 tsp
Jaggery1 tbsp

Instructions:
  • Wash the vegetable. Remove the seeds. Cut it into small pieces and cook it in a cup of water.


  • Heat oil in the pan and add mustard. When they splutter add chopped onions and curry leaves. Fry till onions turn translucent.




  • Now add chopped tomato. Fry till tomatoes turn mushy.Add cooked vegetable, salt, turmeric powder,chilli powder, coriander powder and jaggery. Fry it in medium flame for 5 mins.

Tips:
Adding Jaggery is optional. Jaggery is added to reduce the bitterness.
Lastly garnish with coriander leaves.
This curry can be mixed and eat with rice.
Variation can be done by adding 1/2 cup of tamarind juice.
