Pudina thogayal or Pudina thuvaiyal is prepared from fresh mint leaves. This chutney is usually taken as a side dish to Rice. It also goes well with Idli and Dosa. Ingredients:

Mint Leaves tightly packed  | 
1.5 Cup | 
Instructions:
- Wash Mint leaves and drain excess water in colander.
- Add Oil in a pan. Add red chillies and urad dal. Fry till urad dal turns golden colour.
- Add Mint leaves in medium flame. Allow it to cook for 30 secs to max of 1 min till the mint leaves shrink. Switch of the stove and allow it to cool.
- Add coconut, salt, jaggery and tamarind. Grind it to fine paste adding little water.
Tips:
Adjust chillies to your taste.
Adding coconut is optional.
