Cooked Veggies cut lengthwise

To Grind:
Shredded coconut

Instructions:
- Grind cumin seeds, green chillies and coconut to a coarse paste in blender.
- Wash and cut the vegetables lengthwise. I have used drumstick, Raw Mango, Carrots, Beans and Raw Banana. Cook the vegetables by adding enough water. Don't over cook, the vegetables should retain their crunchiness.
- Heat coconut oil in the pan and add mustard. when mustard splutter, add curry leaves and red chillies.
- Add the cooked veggies and fry for 2 mins. Add the grind-ed coconut mixture, turmeric powder and salt. Cook it in low flame for 3-4 mins. Switch off the stove.
Tips:
Avial vegetables are Carrots, Beans, Cucumber, Elephant Yam, Raw Banana, Drumstick, Pumpkin, Broad Beans and Snake gourd.
Adjust green chillies to your taste.
