Masala Vadai is a South Indian Snacks usually accompanied with Tea or payasam. In my native place, we get vadai paruppu for making this masala vadai. It resembles more like chana dal. As I am fed up of searching this vadai paruppu in Bay area, I replaced it with Chana Dal. This is an irresistable snacks and you can't stop with one or two. My mom usually prepares this for evening snacks . Please check below for step by step instructions and pictures for preparing South Indian Masala Vadai.

- Wash and soak 1/2 Cup Channa dal for 1 hour. Drain excess water. Take 1 tbsp of soaked channa dal and keep it separate.Grind remaining channa dal, ginger, garlic, cumin seeds, fennel seeds, green chillies and salt coarsely without adding water.
- To the ground mixture, add 1 tbsp soaked channa dal, onions, finely chopped curry leaves and coriander leaves.
- Make balls of 2 inch diameter. Flatten balls with your hand and carefully drop in oil. You can also skip preparing balls and take a small portion of dough., flatten it using your finger and drop directly in oil
- Deep fry it in medium flame till shh sound resides.Flip on the other side. Cook until it turns golden brown on both sides.
- Drain the excess oil by placing in paper towel.

Adjust chillies to your taste.
If you are preparing the vadai as a offering to God, avoid onions and garlic.
