Drumstick leaves provides essential iron and calcium for woman especially during pregnancy and breast feeding. These leaves are also rich in vitamins, proteins and potassium. We never buy drumstick leaves in shop in my home town. we had a big tree in our backyard. After coming to US, I was missing these leaves. Last week when I went to shopping, I saw some fresh drumstick leaves. The price was too high, but still I got some leaves. Drumstick Leaves chopped

Garlic (cut Longitudinally)

6-8 Cloves

Salt

Turmeric powder

Shredded coconut

Shallots chopped

Instructions:
- Wash drumstick leaves. Remove small stems. If the drumstick leaves are big, chop into small pieces. Heat oil in the pan and add mustard and urad dal.
- When urad dal turns golden colour, add chopped shallots, garlic and red chillies.Then add drumstick leaves and turmeric. Fry for a min.
- Add salt. Add water till the leaves immerse. close it with lid and cook till all the water is absorbed. Check whether leaves are cooked, else sprinkle some water and cook for some time. When the leaves are fully cooked, switch off the stove and garnish with shredded coconut.
Tips:
- Adding Coconut is optional
- Always wash vegetable and chop it. Nutrients will be lost if we wash the chopped vegetable.
- I haven't added green chilly, as my mom told only red chillies will go well with these leaves in this stir fry.

ReplyDeleteThe tree has disappeared compared to when I was younger. I just walk over to our neighbor's house and pluck the leaves and the beans. These days, I have to buy and its not always available but I sure grab them. Like you said, the nutrients including the goodness for cough.
