Pani Poori | Golgappa

Pani Poori
Pani Puri is one of the popular and favourite Street food of India. This famous chaat is termed as Gol gappa in North India. The filing in pani puri is made with cooked chickpeas, cooked potatoes and some spices. Pani is prepared from mint leaves, coriander leaves, tamarind, jaggery and some spices. Entire pani poori is eaten in one go. Pani Preparation:

Ingredients:
Table 1: To  Grind
Mint Leaves(Tightly packed)
1/2 Cup
Coriander Leaves (Tightly packed)
1/2Cup
Ginger chopped
1/2 tsp
Green chilies chopped
1
Lemon juice
1 tsp
Salt
As needed

Table 2: 
1 tbsp
Cold water
2  Cups
Black salt
1 tsp
Cumin powder
1/4 tsp
Coriander powder
1 tsp
Chilli powder
1 tsp
Pepper powder
1 tsp

Instructions:
  • Wash and chop mint leaves and coriander leaves. Blend all the ingredients mentioned in table 1 into a smooth paste by adding enough water.

  • Take cold water in a big bowl. Add 3 tbsp of grind-ed mixture from table 1. Also add sweet chutney, black salt, cumin powder, coriander powder, chilli powder and pepper powder. Mix well.

Assembling Puri for Pani Puri:

Ingredients:
Puri

Cooked chickpeas
1/4 Cup
Finely chopped onions
1/4 Cup
Finely chopped coriander leaves 
5 stalks
Sev (Optional)
As needed

Mashed Boiled Potatoes 
1/4 Cup
Green chillies chopped 
2
Cumin powder
1/2 tsp
Salt 
As needed

Instructions:
  • Boil the potatoes. Mash it and add finely chopped green chillies, cumin powder and salt to it.

  • Carefully make a small hole in puri with your thumb finger. Stuff cooked chickpeas, mashed boiled potatoes, onions, coriander leaves and sev in each puri.

  • Serve the stuffed puri with pani.

Tips:
I have used store bought puri and sev to make the process easy.
Adding sev is optional.
Finely chopped green chillies can also be stuffed inside puri.
Chickpeas can be replaced with sprouted mung beans.
