Green Chutney and Sweet Chutney are the two chutneys used in almost all Indian Chats. Green chutney is prepared from fresh mint coriander leaves. sweet chutney is prepared from dates, tamarind and Jaggery. These Chutneys can also be served as a dip to samosa and other appetizers. Green chutney preparation:
Ingredients:
Mint Leaves(Tightly packed)

1 Cup

Coriander Leaves (Tightly packed)
|
3/4 Cup
|
Ginger chopped
|
1 tsp
|
Green chilies chopped
|

Lemon juice
|
1 tsp
|
Salt
|
As needed
|
Instructions:
Wash and chop mint leaves and coriander leaves. Blend all the ingredients into a smooth paste by adding enough water. Lemon juice is added to prevent mint leaves colour change.
Sweet chutney preparation:
Tamarind

Marble size
|
Dates pitted
|

|
Jaggery
|
1/4 Cup
|
Chilli powder
|
1 tsp
|
chaat powder
|
1 tsp
|
Salt
|
As needed
|
Instructions:
- Soak tamarind in hot water and extract tamarind juice. Discard seeds and fibres.
- Cook dates, jaggery, tamarind juice, chilli powder, chaat powder and salt for 12-15 mins till dates turn soft.
- Allow the mixture to cool down and grind it to a smooth paste by adding enough water.

ReplyDeleteChutneys are always on top of my list as my fav food. I can eat them with anything. Dates chutney is one I am not familiar with yet its much loved for the sweet and tangy flavors.
