Egg Fry | Muttai Poriyal

Egg is rich in proteins. Muttai Poriyal can be prepared within 15 minutes.It can be easily prepared by bachelors. This muttai poriyal can be mixed with cooked rice and makes a easy lunch box recipe. Egg fry can be served as a side dish to any variety rice and curd rice. It can also be used as a stuffing for Sandwich breads and as a side dish to Chapati, Roti. Cook Time: 10 mins
Yields: 2 Servings

Ingredients:
Oil1 tbsp
Mustard1/4 tsp
Ginger and garlic finely chopped2 tsp
Green chillies finely chopped1
Onions finely chopped1/4 Cup
Tomatoes finely chopped1/4 Cup
Medium sized Eggs3
SaltAs needed
Turmeric powder1/4 tsp
Coriander powder1 tsp
Chilli powder1 tsp
Coriander leaves chopped2 stalks

Instructions:

  • Whisk 3 medium sized eggs and keep it ready.

  •  Heat Oil in a pan. Add mustard and allow it to splutter. Add finely chopped ginger, garlic and green chillies. Fry till raw smell goes off.

  •  Add finely chopped onions and fry till they turn translucent. Add tomatoes and fry till they turn mushy.

  •  Add whisked eggs followed by salt, turmeric powder, coriander powder and chilli powder. Fry till eggs are cooked. Switch off the stove and garnish with coriander leaves.

Tips:
Adjust green chillies and chilli powder to your taste.
Finely chopped ginger and garlic can be replaced by ginger garlic paste.
