Ingredients:
Oil | 1 tbsp |
Mustard | 1/4 tsp |
Ginger and garlic finely chopped | 2 tsp |
Green chillies finely chopped | 1 |
Onions finely chopped | 1/4 Cup |
Tomatoes finely chopped | 1/4 Cup |
Medium sized Eggs | 3 |
Salt | As needed |
Turmeric powder | 1/4 tsp |
Coriander powder | 1 tsp |
Chilli powder | 1 tsp |
Coriander leaves chopped | 2 stalks |
Instructions:
- Whisk 3 medium sized eggs and keep it ready.
- Heat Oil in a pan. Add mustard and allow it to splutter. Add finely chopped ginger, garlic and green chillies. Fry till raw smell goes off.
- Add finely chopped onions and fry till they turn translucent. Add tomatoes and fry till they turn mushy.
- Add whisked eggs followed by salt, turmeric powder, coriander powder and chilli powder. Fry till eggs are cooked. Switch off the stove and garnish with coriander leaves.

Adjust green chillies and chilli powder to your taste.
Finely chopped ginger and garlic can be replaced by ginger garlic paste.
