Gobi Paratha is a North Indian flat bread prepared by stuffing cauliflower and other masala items. Whole wheat flour or atta is used in the preparation of flat bread. Paratha is prepared by flattening the atta balls and stuff any chosen vegetable masala in the middle and the the flat bread is closed around the stuffing as an envelope.Gobi Paratha can be served as Dinner or tiffin. Instructions:
For Outer Cover:
- Make a soft dough by adding atta, salt along with water. Allow it to rest for 15 minutes. Take a fraction of dough and make balls of medium size lemon. For me, it yielded 7 balls.
For stuffing:
- Heat Oil in a pan. Add cumin seeds and fry for a min. Add finely chopped onions, finely chopped ginger and finely chopped green chillies. Fry till raw smell goes off.
- Add shredded cauliflower and fry till the cauliflower is cooked. Add salt, turmeric powder, coriander powder and chilli powder. fry for a min. switch off the stove add coriander leaves.
- Take a fraction of dough and make ball of slightly bigger size of ball prepared for outer layer . The number of outer layer balls and stuffing balls should be same.
- Take a outer layer ball, using hand pat gently and flatten to 2-3 inch diameter. Keep the stuffing in centre and close the outer layer.
- Using rolling pin, flatten the ball to to 10-12 inch diameter.
- Heat dosa pan. place the paratha in dosa pan. Drizzle 1/2 tsp of ghee or oil if needed. Cook till golden spots appear on some places. Turn and drizzle 1/2 tsp of oil. cook until golden spots appear on the other side also. Repeat the process for remaining flatten dough balls.

Adjust chilli powder and green chillies to your taste.
Serve with curd and pickle.
