Dal Baati | Rajasthan Special dish

Dal Baati
Dal Baati is a popular dish from Rajasthan. Baati is prepared by kneading whole wheat flour | atta into stiff dough . It is made into small balls and cooked in oven. Baati is served with ghee and dal. Urad dal, chana dal and yellow split mung dal are pressure cooked along with turmeric powder. Spices, ginger and tomato are fried and cooked dal is also added to it. Serve the dal and baati along with ghee. Adapted the recipe from Sanjeev Kapoor Site. Dal Baati | Rajasthan Special dish

Ingredients:
Table 1: Baati
Whole wheat flour | Atta2 Cups
Baking powder1/4 tsp
Ghee1/4 Cup + 3/4 Cup

Table 2: Dal
Urad Dal | Ulutham paruppu1/2 Cup
Chana Dal | Kadalai paruppu1/4 Cup
Yellow split Mung Dal | Pasi paruppu1/4 Cup
Turmeric powder1/4 tsp
Oil2 tbsp
Cumin seeds | Seeragam1 tsp
Cloves | Krambu2
Cinnamon stick | Pattai1 inch
Cardamom | Ellakai1
Red chillies4
Asafoetida | Hingpinch
Curry leaves3-5
Ginger finely chopped2 tsp
Tomato chopped1/2 Cup
SaltAs needed
Chilli powder2 tsp
Finely chopped coriander leavesFor Garnishing
Lemon juice2 tsp

Instructions: 
Baati Preparation:

  • Take atta in a big bowl. Add salt, baking powder and 1/4 cup ghee. Mix well.Knead into a stiff dough by adding enough water.

  • Preheat oven to 180°C. Take a small portion and roll into round balls. Grease a baking tray. Place the baati on it. Press them slightly.

  • Bake it in pre-heated oven for 15 - 20 mins till they are cooked.


Dal Preparation:

  • Wash and Soak moong dal, urad dal and chana dal for 30 mins. Pressure cook the dal along with turmeric powder for 4-5 whistles.

  • Heat oil in a pan. Add cumin seeds,cinnamon, cardamoms, red chillies,Asafoedita and curry leaves.

  • Add ginger and fry till raw smell goes off. Add tomatoes and fry till they turn mushy.

9 Dal Baati10 Dal Baati

  • Add cooked dal, salt, chilli powder and 1/2 Cup water. Allow the dal to boil and garnish with coriander leaves.

11 Dal Baati12 Dal Baati

  •  Before serving add lemon juice.


Tips:
Adjust chilli powder to your taste. It can be replaced withe green chillies.
Timings in oven will vary based on power of oven.
