Green beans is one of the healthiest vegetable used in gravies, curry, pulao and biryani. Green Beans are rich in Vitamins, dietary fiber and minerals. They also have antioxidant capacity. Green beans poriyal is a dry vegetable curry served as a side dish to Rice. This beans dry fry can also be served with chapati | Roti. Yields: 3 Servings
Beans dry vegetable fry

Ingredients:
Green Beans2 Cups
Oil2 tsp
Mustard1/4 tsp
Chana Dal1 tsp
Urad dal1 tsp
Red Chillies2
Green chilly slit open1
Curry Leaves3-5
SaltAs needed
Onions1/2 Cup
Coriander LeavesFor Garnishing
Shredded coconut1 tbsp

Instructions:

  • Wash and cut beans into small pieces. Heat Oil in a pan. Add mustard and allow it to splutter. Add chana dal, urad dal and fry till chana dal turns golden colour. Add curry leaves, green chilly, red chillies.

  • Add onions and fry till they turn translucent.Add green beans and fry for a min.

  • Add salt and cup of water. Close the pan with a lid and cook till all the water is absorbed. If beans is not cooked, sprinkle some water and cook for some time.

  • Switch off the stove. Garnish with coriander leaves and shredded coconut.

Tips:
Adjust red chillies and green chilly to your taste.
