Ingredients:

Oil | For Deep Frying |
Shredded Paneer | 1/2 Cup |
Boiled and mashed potato | 1/2 Cup |
Cooked carrots and beans | 1/4 Cup |
Salt | As needed |
Cumin powder | 1/4 tsp |
Coriander powder | 1/2 tsp |
Chilli powder | 1 tsp |
Corn Flour | As needed |
Table 2: For Gravy
Oil | 1 tbsp |
Ginger and Garlic chopped | 2 tsp |
Onions chopped | 1/2 Cup |
Tomato chopped | 1/4 Cup |
Salt | As needed |
Chilli powder | 1 tsp |
Cashew paste | 2 tbsp |
Coriander Leaves | For Garnishing |
Instructions:
- Mix shredded paneer, boiled mashed potato, cooked carrots beans, salt, cumin powder, coriander powder and chilli powder in a big bowl.
- Mix well and make balls of lemon size.Toss balls in corn flour.
- Deep fry the balls till they turn golden colour. Remove the excess oil by placing the balls in paper towel.
- Heat Oil in a pan. Add ginger garlic chopped and fry till raw smell goes off. Add onions chopped and fry till onions turn translucent.
- Add chopped tomatoes and fry till they turn mushy. Add salt and chilli powder. Remove the pan from stove. Allow the mixture to cool and grind it into smooth paste by adding enough water in blender.
- Heat a pan. Add ground mixture followed by 1/2 cup water and cashew paste. Allow the gravy to boil.
- Before serving, place the kofta balls in the gravy and garnish with coriander leaves.

Tips:
Add kofta balls in the gravy just before serving otherwise the kofta balls will break.
Adjust chilli powder to your taste.
Carrot and beans should not have extra moisture. Once carrot and beans are cooked, place it in muslin cloth and squeeze out the extra water. Use the water while preparing gravy.
