Parangikai Kootu | Yellow Pumpkin Kootu
Pumpkin is a low calorie vegetable and rich in vitamins and minerals. Yellow pumpkin is known as Parangikai in Tamil, Gummadikaya in Telugu, Kaddu in Hindi. Kootu is a simple healthy dish prepared with vegetable and dal. For this kootu,  I have used yellow split mung dal. We can replace yellow split mung dal with  toor dal or chana dal. I have prepared this kootu as a one pot meal using pressure cooker. Parangikai Kootu


Ingredients:
Yellow Pumpkin chopped 
1/2 Cup
Mung dal | Pasi paruppu 
1/4 Cup
Oil
2 tsp
Mustard
1/4 tsp
Cumin seeds
1/2 tsp
Curry leaves
3-5
Red Chilly
2
Chana dal | Kadala paruppu 
1/2 tsp
Urad dal | Ulutham paruppu 
1/2 tsp
Onions chopped
1/4 cup
Ginger finely chopped
1 tsp
Tomato chopped
1/4 Cup
Turmeric  Powder
1/4 tsp
Coriander Powder
1/2 tsp
Chilli Powder
1 tsp
Salt
As needed
Coriander Leaves
For Garnishing


Instructions:

  • Wash and remove the outer skin, seeds of pumpkin.Cut it into small pieces.

  • Heat Oil in a pressure cooker. Add mustard and allow it to splutter. Add cumin seeds, Curry leaves, red chilly, chana dal and Urad dal. Fry till chana dal turns golden color. Add onions and finely chopped ginger. Fry till onions turn translucent.

  • Add tomatoes and fry till they turn mushy. Add finely chopped yellow pumpkin pieces and fry for a min.

  • Add mung dal, salt, turmeric powder, coriander powder, chilli powder and enough water.

  •  Pressure cook for 3-4 whistles. Garnish with coriander leaves.

Tips:
Adjust red chillies and chilli powder to your taste.

  4. Beautiful combo. While I don't cook pumpkins very often, basically my other half fears the effects on his diabetes, I love the taste, what more with dhal, Its a delicious dish which I have to make when he is away.
