Fresh masala is prepared by grinding Indian spices. Then the soya chunks is cooked in this freshly ground spice powder. Instructions:
- Soak soya chunks in hot boiling water for 10 mins and close with a lid. After 10 mins, wash in cold water for 2-3 times. Strain and squeeze the extra water from soya chunks. Cut soya chunks into 2 pieces.
- Dry roast all the ingredients from table 2. Grind it to a coarse powder.
- Heat Oil in a pan. Add mustard, when it splutters add finely chopped ginger, garlic, curry leaves. Fry till raw smell goes off. Add shallots and fry till shallots turn translucent.
- Add soya chunks. Add the ground powder, salt and sprinkle some water. Fry for 2-3 mins till raw smell goes off. Switch of the stove and garnish with coriander leaves.
