Stuffed Peerkangai Kuzhambu
Ridge gourd is rich in beta carotene, dietary fiber, vitamin C, zinc, riboflavin, iron and magnesium. Ridge gourd  is known as  Beerakaya in telugu and Peerkangai in tamil. Ridge gourd is stuffed with freshly prepared stuffing. Onions and tomato are fried and ground to fine paste. Cook the stuffed ridge gourd and ground gravy in pressure cooker for 3 whistles. Stuffed Ridge gourd Kuzhambu | Stuffed Peerkangai Kuzhambu

Ingredients:
Table 1: For stuffing
Ridge gourd Medium size1
Sesame seeds | Ellu1 tbsp
Shredded coconut2 tbsp
Peanuts2 tbsp
SaltAs needed
Coriander powder1 tsp
Chilli powder1 tsp

Table 2: For Gravy
Oil2 tsp
Ginger and garlic1 tsp
Onions chopped1/2 Cup
Tomato chopped1/2 Cup
SaltAs needed
Coriander powder1 tsp
Chilli powder1 tsp

Table 3: For Tempering
Oil1 tbsp
Mustard | Kadugu1/4 tsp
Curry leaves3 to 5
Cumin seeds | Seeragam1 tsp
Urad dal1 tsp
Red Chillies2
Coriander LeavesFor Garnishing

Instructions:
For stuffing:

  • Dry roast sesame seeds, shredded coconut and peanuts. Allow it to cool and grind it into coarse powder. Add salt, coriander powder and chilli powder to this ground powder. Now the stuffing is ready.

  •  Wash and peel the outer skin of Ridge gourd. Don't have to scrap the whole green skin. Cut into 1.5 inch circles.

  • Make a cross using knife to half of its length. Don't cut the vegetable fully. Check the below picture  Place the stuffing inside ridge gourd.

 For Gravy:

  • Heat Oil in a pan. Add ginger and garlic. Fry till raw smell goes off. Add onions and fry till they turn translucent. Add tomatoes and fry till they turn mushy. Add salt, coriander powder and chilli powder.

  • Grind it into smooth paste by adding enough water in blender/mixie. Add the remaining stuffing powder to this ground mixture.

For Tempering:

  • Heat Oil in a pressure pan. Add mustard and allow it to splutter. Add urad dal, cumin seeds, red chillies and curry leaves. Fry till urad dal turns golden colour.

  • Arrange the stuffed ridge gourd in the pressure cooker and pour the ground mixture on top of the ridge gourd. Add 1 cup of water and pressure cook for 3-4 whistles.

  •  Garnish with coriander leaves.

Tips:
Chilli powder is added at two stages. So adjust according to your taste. Salt is also added for stuffing and gravy . so add salt carefully.
I have used white sesame seeds for stuffing.

  5. Really creative. I always take the easy way out with ridge gourd, just drop them in sambar or stir fried. Shall consider, that stuffing is simply divine.
