Ingredients:
Table 1: To Dry roast and grind
Ajwain | Omam | 2 tsp |
Coriander seeds | Dhaniya | 1 tbsp |
Chana dal | Kadalai paruppu | 1 tsp |
Urad dal | Ulutham paruppu | 1 tsp |
Cumin seeds | Seeragam | 1 tsp |
Red chillies | 2 |
Black pepper | Milagu | 1/2 tsp |
Fenugreek seeds | Vendhayam | 1/4 tsp |
Table 2:
Oil | 2 tsp |
Mustard seeds | 1/4 tsp |
Urad dal | 1 tsp |
Curry leaves | 5 to 8 |
Asafoetida powder | Hing | Pinch |
Turmeric powder | |
Tamarind | Half Lemon Size |
Salt | As needed |
Instructions:
- Dry roast all the ingredients in table 1. Allow it to cool and grind it into smooth powder in blender or mixie.
- Soak tamarind in hot water for 10 minutes. Squeeze the seeds and fibre to get the tamarind juice. Add turmeric powder and keep it ready.
- Heat Oil in a pan. Add mustard and allow it to splutter. Add urad dal and curry leaves. Fry till urad dal turns golden colour. Add a pinch of asafoetida powder.
- Add tamarind juice, spice mixture got from ingredients in table 1 and salt. Allow the kuzhambu to boil and simmer for 5 mins.

Adjust red chillies and black pepper to your taste.
