Tofu Fried Rice | Easy Lunch box Recipe

Tofu Vegetable Fried Rice
Tofu is a vegetarian food prepared from Soya. Tofu is a very low calorie food and rich in protein and  calcium.Vegans can replace paneer with Tofu. My hubby loves tofu a lot. I am planning to experiment more tofu recipes in future. Tofu Vegetable fried rice is an Indo-chinese rice recipe. It can be prepared for potluck and get together. Yields: 4 Servings
Tofu and Vegetable Fried Rice

Table 1:
Basmati Rice               
1.5 Cups
Veggies of your choice chopped finely 
(Carrots, capsicum, cabbage ) 
2 Cups
Sesame Oil
1 tbsp
Ginger and garlic finely chopped
1 tbsp
Green Chilly slit open
Soy sauce
2 tsp
Green chilly Sauce
1 tsp
White Pepper
1 tbsp
Green onions chopped
For Garnishing

Table 2:
1 tbsp
Extra firm Tofu pieces                              
1/2 Cup            

  • Soak Basmati rice for 1 hour and pressure cook for 3 whistles or follow the instructions given in Basmati rice bag. Add 1 tsp of Oil to Rice and keep it ready.This will reduce the stickiness. Heat Oil in a pan and shallow fry Tofu.

  • Heat Oil in a pan.Add green chilli, ginger and garlic. Fry till raw smell goes off. Add onions and fry till they turn translucent.

  •  Add Carrot and  fry it for 2-3 mins. Add cabbage and fry till  veggies are cooked. Add capsicum and fry for 2 mins. Capsicum should retain its crunchiness, so add it last.

  •  Add  Soy sauce, green chilly sauce, fried tofu ,salt and white pepper. Mix well. Fry for 2-3 mins in medium flame. Switch of the stove. Add Basmati Rice and garnish with green onions.

  • Adding green chilly is optional
  • If white pepper is not available then use black pepper powder. but colour of the dish will get change.
  • If green onions are not available, then replace it with  coriander leaves.
