Instructions:
- Wash and cut the vegetables. I have used Carrots, Beans and Potato. Heat coconut oil in the pan and add finely chopped ginger and garlic. Fry till raw smell goes off. Add green chillies and curry leaves.
- Add garam masala items ( Cloves, Cinnamon and Cardamom). Add onions cut lengthwise and fry till they turn translucent. Add veggies.
- Add thin coconut milk. Allow it to boil and simmer till the vegetables are cooked. Add salt and pepper powder.
- Lastly add thick coconut milk and allow it to boil for 2-3 mins.
Tips:
In order to save the cooking time, I steam the veggies and add it to the coconut milk.
Both Green chillies and pepper powder are added. so adjust to your taste.
Just got back from Kerala. Eat appam to utmost satisfaction. This stew is a perfect pairing for it. We over here however eat appam as a sweet treat with coconut milk and brown sugar.
