Atta Biscuits | Atta Nankhatai

Atta BiscuitsNankhatai is an excellent tea time snacks. It is usually made with all purpose flour alias maida. I was searching for more fiber version. I tried these biscuits with whole wheat flour and Sooji. Cardamom and pista adds more flavor to the recipe. A healthier snacks treat to kids. Adapted the recipe from here. Yields:  9 pieces.
Wheat flour biscuits

Table 1:
Atta | whole wheat flour1/2 Cup
Semolina | Sooji3 tbsp
Baking powder1/2 tsp
Ghee1/2 Cup
AlmondsFor Garnishing

Table 2: To Grind
Sugar1/4 Cup
Pistachio(Optional)1 tsp


  • Preheat oven to 300 F. Grease the baking pan with butter. Grind sugar, cardamom and pistachio to smooth powder. Take Atta, sooji and baking powder in a big bowl.

  •  Mix ground sugar mixture to atta bowl. Slowly add ghee and make a soft dough.

  • Take a fraction of a dough and make a ball the size of a medium lemon. Flatten the balls slightly and  arrange it in baking pan leaving 2 inch gap. Garnish with almonds. Bake in oven for 25 mins or until the edges are golden.

  • Immediately after removing from oven, the biscuits will be soft. Leave it in the baking pan for 15 mins till the biscuits cool and turn firm.
  • Ghee consumption depends on the atta flour brand.
  • Cashews can also be used for garnishing.
  • Adding pistachio is optional.
