Coconut Rice - Thengai Sadam

Thengai SadamMy granny's house is surrounded by lot of coconut trees. She uses coconut daily in her cooking. On the other hand, my mom usually avoids coconut .She says it has more cholesterol. I love coconut, but i try to use as little as possible. Today I was carving for some coconut recipe. Coconut rice is a quick delicious lunch box recipe. The best side dish for coconut rice is paruppu chutney. Please check below for step by step instructions and pictures for preparing Coconut Rice.
Preparation Time:5 mins
Cook Time:10 mins 
Ready In: 15 mins
Yields : 3 servings.

The above cook time is under assumption that the rice is already cooked. If rice is not cooked already, then add another 15 mins.
Thengai Sadam

Ingredients:
Cooked Rice
2 Cups
Shredded coconut           
1/2 cup
Oil
2 tsp
Mustard
1/2 tsp
Curry leaves
6
Chana dhal
1 tsp
Urad dhal
1 tsp
salt

Green chillies
2
Red chillies
2
Coriander Leaves chopped
3 stalks
Roasted peanuts
1/4 Cup

Instructions:
  • Heat oil in the pan and add mustard,chana dal, urad dal and fry it till the dal turns golden brown color.

  •  Add curry leaves, green chillies and red chillies. Fry for a min.Add shredded coconut and fry for 2 mins in medium flame.

  • Switch of the stove, add roasted peanuts and coriander leaves. Add rice and salt.

Tips:
To get rich flavour, add  roasted cashews.
Adding roasted peanuts or roasted cashews is optional
