Uthappam | Uttapam is a south Indian Breakfast prepared from Dosa batter. It is a thick pancake, where the toppings are cooked along with Uthappam. We can compare this to pizza . The base is prepared from Rice and Urad dal. The toppings is your choice. This post explains the various toppings and their combinations that can be considered while making Uthappam.

Ingredients:
2.5 Cups

Onions chopped

1/2 Cup

Shallots chopped

1/4 Cup

Tomato Chopped
|
1/2 Cup

Carrot shredded

1/4 Cup

Coriander leaves chopped

Instructions:
- Heat dosa tava in medium flame
- Sprinkle water and check whether the dosa tava is hot.
- Take 1/2 Cup of dosa batter and spread evenly starting from centre.
- Pour oil on Uthappam circumference.
- when the colour of dosa is half cooked,add the desired toppings and spread Oil on toppings. Close the lid and allow to cook for 1 min.
- Carefully turn the uthappam and cook for a min.
Onion Uthappam, Tomato Uthappam, Shallots Uthappam, Carrot Uthappam, Coriander Uthappam and Podi Uthappam
Mixed vegetable Uthappam:
For mixed vegetable uthappam, I added all the toppings. (Shallots, tomato, onion, coriander,podi and carrot)
Dosa batter prepared with right ingredients, grinded to soft texture with enough water and proper fermentation plays a key role in making Uthappam.
