Coriander Rice

Coriander leaves are rich in iron like other green leafy vegetables. Almost all South Indian curries and gravies are garnished with this fresh green leaves. It is one of the essential ingredient in daily Indian cooking. coriander rice is an easy and quick lunch box recipe. Ingredients:
Table 1: To Grind
Chopped coriander leaves 
( tightly packed) 
1/2 Cup
Green chillies
2
Ginger chopped
2 tsp

Table 2: 
Oil                  
1 tsp   
Mustard              
1/4 tsp
Urad Dal
1  tsp
Red chillies
1
Onions chopped 
1/2 Cup
Roasted peanuts
1/4 Cup
Cooked Rice
2 Cups


Instructions:
  • Grind green chillies, coriander leaves and ginger by adding little water into a smooth paste in a blender.Heat Oil in a pan. Add mustard, urad dal and red chillies. Fry till urad dal turns golden colour. 

  • Add onions and fry till turn translucent. Add roasted peanuts.  

  • Add grind-ed mixture and allow it to cook for 5 mins in medium flame till raw smell goes off. Switch of the stove and add rice and salt.Mix well

Tips:
  • Adjust chillies to your taste.
  • Adding roasted peanuts is optional.
  • Roasted peanuts can be replaced with roasted cashews.
