Coconut Milk Pulao in Pressure Cooker

Coconut Milk is prepared from grated coconut and is very popular in South Asian cuisine. Coconut milk will be mildly sweeter than cow's milk.  Coconut milk is used as milk substitute in baking by vegans.Coconut Milk Pulao or Coconut Milk pilaf is a less spicy rice dish. I prepared this recipe along with gobi manchurian. I will update the gobi manchurian recipe soon. Yields :                                  2 servings
Coconut Milk Pulao in Pressure Cooker

Ingredients:
Basmati Rice
1 Cup
Butter / Oil
2 tbsp
Cardamom
1
Cinnamon stick
small
Cloves
3
Fennel seeds
1 tsp
Onions chopped   
1/2 Cup
Ginger Garlic paste
1 tsp
Onions chopped lengthwise 
1/2 Cup
Chopped carrots
1/4 Cup
Green Peas
1/4 Cup
Salt

Coconut Milk
1 Cup
Roasted cashews
For Garnishing
Coriander LEaves
For Garnishing

Instructions:
  • Soak Basmati rice for 1 hour or as per instructions given in rice bag.Heat Oil in the cooker. Add cardamom, cinnamon, cloves and fennel seeds.

  •  Add onions and fry till onions turn golden colour.Add ginger garlic paste and fry till raw smell goes off.

  •  Add carrots and green peas. Fry for 2 mins. Add basmati rice and salt.

  •  Add 1 cup coconut milk and 1 Cup water.  Pressure cook for 3 whistles. Garnish with coriander leaves and roasted cashews.

Tips:
Ginger garlic paste can be replaced by Fresh ginger and garlic.

  3. Sometimes I feel with coconut milk, Asian dishes are like not complete. I use it quite often for my cooking too and I know how fabulous the creamy taste would have been in a pulao. And when there's also other interesting ingredients added inside, its so beautiful and inviting.
