Strawberry and Nutella is my favourite combination. The best part of this cookie is using of fresh strawberries. Nutella can also be replaced by your favourite jam. Strawberry Nutella cookies is prepared as a part of Home Baker's challenge. This group is started by Ms Priya and this month challenge is hosted by Ms Vijayalakshmi. You can join this group to learn new baking recipes every month. Please check below for step by step instructions and pictures for preparing strawberry cookies with nutella filling.

Instructions:
Strawberry Thumbprint cookies with nutella filling
- Wash and chop 10 medium size strawberries. Add a drop of red food colour and mash the strawberries using potato masher.
- If needed add 1 tsp of milk, but make sure it doesn't turn watery. For me, it yielded approximately 3.5 tbsp of crushed strawberries.Preheat oven to 350 F.Sift All purpose flour / Maida, salt and baking powder in a bowl.
- Bring butter to room temperature in second bowl. Add sugar and whisk till it turns soft and creamy.
- Add vanilla essence followed by crushed strawberries to the butter sugar mixture.Whisk it to mix well.Add the flour mixture to the butter mixture and prepare a soft dough.
- If needed, apply oil in your hands to bring dough together. Make small balls (Gooseberry size) and place it in baking sheet.
- Flatten the balls by slightly pressing and with the help of thumb or back of spoon, make a small hole in the middle of cookies.
- Bake the cookies in the preheated oven for 10-12 minutes. Remove the cookies from oven. Again using teaspoon or thumb, gently press out the hole in cookies. Allow the cookies to cool down and fill nutella in little holes in cookies.

ReplyDeleteHi nitya, your cookies look absolutely delicious :) was wondering if u have tried these with whole wheat as my daughter's school is quite strict about that and I would like to try it with that.
ReplyDeleteI am yet to try with whole wheat.. Haven't tried it before..
DeleteHi Nitya, so I tried these with whole wheat. The taste is awesome, however, they all turned brown like the regular cookie and weren't the nice pink colour like yours :( maybe because of the whole wheat I don't know. Will try with maida next time, just for me to see how they turn out. :)
DeleteGreat.. I will also try it with whole wheat sometime.. Thanks for your feedback..
