1/2 Cup |

Tomatoes |

Coriander chopped | 
4 to 5 sticks | 
Instructions:
- Wash and chop tomatoes. Grind tomatoes to smooth paste in blender.
- Heat Oil in a pan. Add mustard and when they splutter add cumin seeds and fennel seeds. After 2 mins, add finely chopped ginger, garlic, curry leaves and green chillies. Fry till raw smell goes off.
- Add onions and fry till onions turn golden colour.Add tomato paste and fry for 3 mins in medium flame.
- Switch off the stove and garnish with coriander leaves. Mix cooked rice and salt.
Tips:
Fresh ginger and garlic can be replaced by ginger garlic paste.
Tomatoes can be replaced by adding 4 tbsp of thick tomato paste.
Adjust green chillies to your taste.
 






 

I will prefer the fresh tomatoes, maybe a bit more of work but the outcome is worth the try. Very fragrant as the spices and herbs are great add on for that.
